While there are a lot of versions of Pasta Fazul, I prefer this simple version. It is quick to put together and very satisfying.
- 2-3 strips of bacon, diced
- 2 smashed garlic cloves
- 1 diced onion
- 1 can petite dice tomatoes
- 1 can Great Northern Beans, drained
- 1 can chicken broth
- 2 cups small cooked pasta
- Salt and Pepper
Dice the bacon and add to a pot to cook and render out the fat. When the bacon is crisp, remove and set aside to garnish each serving. Add the smashed garlic cloves and the onion to soften in the bacon fat. Add the can of tomatoes, chicken stock and drained beans to the pot. Season with salt and pepper. Allow to simmer for 30 minutes until reduced and the flavors have deepened. Adjust seasoning if needed. Add cooked pasta and serve with the cooked bacon and pecorino cheese.
*Note: You can make a double batch and freeze before adding pasta.
