Ingredients
- 3 tbsp olive oil
- 1 small sweet onion, finely diced
- 3 garlic cloves, minced
- 3 tbsp chili powder (The flavor of the chili powder will have a big impact on the flavor of the sauce, so consider heat level and overall flavor when choosing a chili powder.)
- 1 tsp sugar
- 1 tbsp tomato paste
- 1 8oz can of tomato sauce
- 1 cup of water
- 1/2 tsp salt
Saute the onion in the olive oil, add the garlic once the onion has softened, then add the chili powder and saute for a couple of minutes. Mix in the tomato sauce, tomato paste, sugar, salt and water (you can add more or less water depending on the consistency you desire). Salt the mixture to taste and allow it to simmer for 15 minutes more. Use with your favorite enchilada fillings.
