French Toast

  • 6 slices white bread
  • 2 eggs
  • 2-3 tbsp milk
  • 1 tsp vanilla
  • 1 pinch cinnamon
  • Butter for frying

Mix the eggs and milk together well in a measuring cup and strain through a small strainer into a shallow bowl, then mix in the vanilla and cinnamon. I do this to remove the stickier bits of the egg that can glob onto the bread. Heat a griddle pan on medium/low and melt about a tablespoon of butter over the surface. Quickly dip each piece of bread into the mixture on each side. I try to just get it coated, but I do not like to soak the bread. Then put it immediately onto the griddle, and do the same to each slice of bread. Once all are on the griddle, add a small amount of butter onto the uncooked side of each piece of French Toast. When the first side is nicely browned, flip over and cook on the other side. When browned on the second side, serve immediately.

Top with: more butter, real maple syrup (I like the Amber grade), fruit, jam, whipped cream, or even peanut butter.
