Brownies

These are my “famous” award-winning brownies. I won second place in the Orange County Fair with this recipe and it is still my favorite brownie recipe.

  • 1 cup melted, salted butter
  • 2 cups of sugar
  • 4 eggs
  • 2 tsp vanilla
  • 1 cup flour
  • 3/4 cups cocoa powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup (or more) semi-sweet chocolate chips

Mix the melted butter, sugar and eggs well, then mix in the rest of the dry ingredients and finally the chocolate chips. Butter a glass baking dish (9×13 is standard, but I somehow have a slightly smaller dish, 8×12 maybe, and that one is perfect) and line with a long sling of parchment along the bottom, so that you have over hang on the short ends of the pan to lift out the brownies. Pour the batter into the pan and bake at 350 for 25-30 minutes, do not over bake. The batter will puff and will not be jiggly, at that point it is likely done and should be pulled. These brownies take forever to cool and settle, the texture will be better on the second day.
