Homemade pancakes are so easy and quick. Here is my favorite recipe.

  • 2 cups whole milk with 1 tbsp of lemon juice or 2 cups buttermilk
  • 2 1/4 cups flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 egg
  • 3 tbsp melted salted butter
  • 1 tsp vanilla

Whisk dry ingredients together, then add wet ingredients and whisk only until mixed and lumpy. Oil a non-stick griddle pan and scoop 1/4 cup of batter onto the hot griddle and cook until underside has started to brown and the edges starts to look set, then flip and finish cooking.

*Variation: You can add soft fruit like cooked apples, or fresh berries, or chocolate chips, by sprinkling them into the batter after ladling it onto the griddle.
