This can be a loaf or made into muffins. It’s a great way to get some chocolate with your pumpkin treat. Works well for Fall or any time of year.
- 1 3/4 cups flour
- 1 tsp baking soda
- 2 tsp cinnamon
- 3/4 tsp salt
- 2 eggs
- 1/2 cup sugar
- 3/4 cup packed dark brown sugar
- 1 can (15oz) pumpkin puree
- 1/2 cup vegetable oil
- 2/3 cup semi-sweet chocolate chips (plus a few more for the top)
Preheat the oven to 350 degrees. Add all of the ingredients to a large bowl and mix well until full combined. Prepare a 9×5 loaf pan by greasing and adding a sling of parchment along the bottom and up the long sides of the pan to help you lift out the loaf when finished. Add the batter to the loaf pan and sprinkle a few extra chocolate chips on top. Bake for about 60 minutes, test with a toothpick in the center until it comes out mostly clean to check for doneness. Because of all of the pumpkin these have a moist and slightly dense texture, perfect for breakfast.
Alternatively, you can scoop the batter into lined muffin tins and cook for about 20 minutes.
