Beets and Goat Cheese Salad

  • 1-2 heads of chopped romaine lettuce
  • 1 pink lady apple diced
  • 1/4 cup of chopped pecans
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • Salt and Pepper
  • 1/4 cup crumbled goat cheese
  • 2-3 roasted beets, peeled and diced small

Combine the lettuce, apples, and pecans in a large salad bowl. Dress with the olive oil, balsamic, salt and pepper. Dish out portions and add goat cheese crumbles, then beets on top of each portion. Enjoy!

Note: You can mix all ingredients together, but everything will turn pink and it’s a little funny looking, but still tastes great!
