Bacon and Fried Egg Breakfast Taco

We love Taco Tuesday at our house, so we are documenting our weekly taco recipes.

  • 1lb cooked and chopped bacon
  • 1 over easy egg fried in butter, seasoned with salt and pepper for each taco
  • Shredded cheddar
  • Corn tortillas, olive oil for griddle
  • Topped with crushed Calabrian chili peppers

Pre-cook the bacon and chop into bite-sized pieces. Fry an egg for each taco in butter and season with salt and pepper.

Brush the corn tortillas with olive oil and griddle the tortillas until slightly golden. (Note: we like to make homemade tortillas when we have the time ) Add bacon, egg, cheese and chili and enjoy!
