BBQ Chicken Tacos

We love Taco Tuesday at our house, so we are documenting our weekly taco recipes.

  • 1 lb chicken tenders, seasoned with seasoning salt
  • 3 tbsp bbq sauce, mixed with 1 tbsp mild hot sauce
  • 1 can black beans
  • Shredded cheddar cheese
  • Chopped cilantro
  • Pickled onions (1 thinly sliced red onion, 1/4 cup of white vinegar, 1/4 cup of water, 2 tbsp of sugar, 1/2 tsp salt, boiled together until translucent.)

Season your chicken and drizzle with olive oil and cook on your grill until mostly cooked. Baste with your bbq and hot sauce mixture. Cook until well caramelized. Remove from heat and let it rest. Cut the chicken into 1/2 inch cubes.

Drain the beans, and add to a non-stick skillet with a drizzle of olive oil, onion powder, smoked paprika, salt and pepper.

Prepare your pickled onions by slicing the onion thinly and adding the vinegar, water, salt and sugar to a pot and bring to a boil. Cook until the onions are translucent.

Warm the flour tortillas on the griddle (if needed). Add the beans, chicken and shredded cheese, pickled onions and cilantro. Enjoy!
