Blackened Salmon Tacos

We love Taco Tuesday at our house, so we are documenting our weekly taco recipes.

  • 1 lb salmon, seasoned with salt, pepper, garlic powder, paprika, and ancho chile powder
  • Black Bean Salsa: Drained and rinsed black beans, avocado, tomato, scallion, cilantro, salt, pepper and lime juice
  • Corn Tortillas

Season your salmon and drizzle with olive oil and cook in a non-stick skillet and break apart into smaller pieces (about 1 inch).

Combine the ingredients of the black bean salsa and season to taste.

Warm the corn tortillas on the griddle with a drizzle of olive oil. Add the salsa and salmon. Enjoy!
