Cheesy Ham & Potato Chowder

  • 2 tbsp olive oil
  • 1 onion diced
  • 3 carrots diced
  • 1 1/2 cups of cubed potatoes
  • 2 tbsp of flour
  • 2-3 cups of ham broth (can be made from a ham bone or simmering ham trimmings in water)
  • 1 1/2 cups of milk
  • 1/2 cup of frozen corn
  • 2 cups cubed fully cooked ham
  • 2 cups grated cheddar
  • Salt and pepper

Add the olive oil, onion and carrot to the pot and sauté until they begin to soften. Then add the potatoes and flour and stir to coat the vegetables in the flour and cook for a couple of minutes. Next add the ham broth and mix well to incorporate. Add the milk and allow to simmer until the broth thickens and the vegetables are cooked. Then add the ham and cheddar and stir until the cheddar has melted. Taste and add salt and pepper as needed. Serve with crusty bread. Enjoy!
