We love Taco Tuesday at our house, so we are documenting our weekly taco recipes.
For this recipe, you need to have some left over prime rib, roasted to a rosey medium. Link:
- 1/2 lb leftover prime rib cut into half inch cubes and seasoned with: salt, pepper, and chili powder (the meat is quite rich so you don’t need as much as a typical recipe. )
- 1 tbsp olive oil
- 1 can black beans, lightly drained and seasoned with salt, pepper, dried oregano, paprika, garlic powder and a teaspoon of butter
- Corn tortillas, olive oil for griddle
- Toppings: Avocado, roasted tomatillo salsa (https://mangiavita.com/2023/12/12/roasted-tomatillo-salsa/ ), and diced radish
Add the lightly drained black beans and liquid to a non-stick pan with the seasonings and butter. Cook until the liquid thickens a little and lightly mash about 1/3 of the beans with a spatula.
Add a tbsp of olive oil, the prime rib cubes and seasonings to a hot non-stick skillet. You just want lightly caramelize the meat without overcooking.
Brush the corn tortillas with olive oil and griddle the tortillas until slightly golden. Add beans, meat, toppings, your favorite hot sauce and enjoy!
