This is another recipe from Gram D.
- 1lb chicken parts (can be boneless or bone-in, you will just need to adjust the cooking time)
- 1 cup rice
- 1 diced shallot
- Pinch of saffron
- 2 1/4 cup water
Salt and pepper the chicken parts, pan fry in olive oil, until lightly browned and set aside. Discard all but 3 tbsp of the oil, and fry the rice and shallot together in the pan. Add the water to the pan and stir in saffron until the water turns a bit yellow. Transfer the rice mixture to a baking pan and add the chicken parts. Cover and bake at 350 degrees until the water is absorbed, the chicken is cooked and the rice is tender.
*Note: You can use the Mahatma packaged Saffron Rice in sub for the plain rice and saffron seasoning.
