Whipped Candied Sweet Potatoes

This was my Grandma D’s staple on the holiday dinner table.

  • 2 – 29 oz cans sweet potatoes
  • 1 cup brown sugar
  • 1 cup liquid from the sweet potatoes
  • 1/4 tsp salt
  • 1/4 cup butter
  • mini marshmallows

Boil the butter, brown sugar, liquid and salt together to form a syrup. Put the drained potatoes in a large bowl and mix with the syrup with a hand mixer on low. Put the mixture into a buttered baking dish and cover with mini marshmallows. Bake at 350 degrees for 30 minutes or until marshmallows are toasted.
