Donut Cake

This is a great breakfast for those who like donuts, but don’t enjoy the fuss of frying them.

Ingredients

  • 2 cups flour
  • 1 cup sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup whole milk
  • 1/4 cup sour cream
  • 1 egg
  • 2 tbsp melted butter
  • 1 tsp vanilla

Glaze

  • 2 cups powdered sugar
  • 4 tbsp heavy cream
  • 1 tsp vanilla
  • 1 pinch fine salt

Preheat the oven to 350. Butter an 8×8 cake pan and add a parchment sling along the bottom for easy release. Whisk together the dry ingredients in a large bowl. Whisk together the wet ingredients in a large measuring cup. Add the wet ingredients into the dry and mix just until combined. Transfer the mixture into the baking pan and bake for 40 minutes or until slightly golden and a toothpick inserted into the center comes out clean. Remove from pan to a wire rack.

Whisk together the glaze ingredients and pour the glaze over the entire cake while the cake is still very warm. (A sheet of parchment under the cooling rack will make the clean-up easier.) Allow to set for about 15 minutes. Enjoy!
