Griddled Chicken Tacos

We love Taco Tuesday at our house, so we are documenting our weekly taco recipes.

  • 1 12 oz can of cooked chicken breast, seasoned with pepper, garlic powder, chili powder, cumin, and olive oil.
  • 1 can refried beans
  • Shredded cheddar cheese
  • Diced avocado
  • Pico de gallo (recipe: )
  • Corn tortillas

Liberally season your chicken. Drizzle olive oil in your non-stick skillet and add the chicken to cook on medium heat until fully cooked and slightly caramelized.

Warm the beans.

Warm the corn tortillas on the griddle with a drizzle of olive oil. Add the beans, chicken and shredded cheese to each tortilla and fold over. Griddle each side until the fillings are warm and the cheese has melted. Serve with pico and diced avocado.
