Roasted Tomato, Feta Pasta

This simple dish is an easy, fast meal to pull together on a weeknight. Being Italian, I love pasta dishes and this one is no exception.

  • 1/2 lb cooked pasta
  • 1 pint of cherry tomatoes
  • 1 small brick of feta cheese (8 oz)
  • 3 garlic cloves
  • 4 tbsp olive oil
  • Salt, pepper, dried basil, dried parsley, red pepper flakes

Cook the pasta to al dente in salted boiling water. Add the tomatoes, feta cheese, garlic cloves, olive oil and seasonings to a ceramic roasting pan. Put the garlic cloves on top of the brick of cheese and drizzle the oil over the top of the cheese and tomatoes, season. Bake in a 350 degree oven until the tomatoes burst and begin to brown, about 20 minutes. Take care not to burn the garlic cloves, remove if they begin to darken. Smash the garlic cloves with a fork into small pieces. Stir the rest of the ingredients together and add cooked pasta. Mix to combine. Serve with pecorino cheese grated over the top. Enjoy!
