Cajun Shrimp and Bacon Tacos

We love Taco Tuesday at our house, so we are documenting our weekly taco recipes.

We picked up some Cajun flavored bacon at our local farmer’s market. I decided to use the bacon along side some Cajun shrimp to make these tasty tacos. If you cannot find flavored bacon, I would just use regular bacon with same seasoning as the shrimp.

  • 4 strips of bacon
  • 1 lb of shrimp
  • Seasonings: salt, pepper, smoked paprika, garlic powder
  • 1 diced jalapeno
  • Corn tortillas, olive oil for griddle
  • Toppings: shredded cabbage with lime juice, sliced avocado, cilantro

Cut up the bacon and fry until caramelized in a non-stick skillet. Remove bacon and add the shrimp, seasonings and jalapeno, fry until just cooked through and caramelized. Do not over cook. Cut up shrimp and remove tails (if needed).

Brush the corn tortillas with olive oil and griddle the tortillas until slightly golden. Add shrimp, toppings, and hot sauce and enjoy!
