We love Taco Tuesday at our house, so we are documenting our weekly taco recipes.
- 1lb skirt steak, seasoned with salt, pepper, garlic powder, chili powder, cumin, and olive oil.
- Toppings: shredded cheddar, diced tomato, sliced avocado, cilantro
- Corn tortillas warmed on the griddle
- Refried beans
Liberally season your skirt steak on both sides and drizzle with olive oil. Cook your steak on the grill on medium high heat to your preferred doneness, I like medium well. Pull the meat aside to rest for about 10 minutes. After it has rested cut the meat into 1/4 inch cubes and toss with the collected juices from resting.
Warm the beans and let some of the moisture evaporate.
Warm the tortillas on the griddle. Add beans, meat, cheese, tomato, avocado and cilantro. Enjoy with your favorite hot sauce!
