Chicken and Black Bean Tacos

We love Taco Tuesday at our house, so we are documenting our weekly taco recipes.

  • 1lb chicken tenders, seasoned with salt, pepper, garlic powder, chili powder, cumin, and olive oil.
  • Black beans, drained and seasoned with olive oil, salt, pepper, garlic powder, paprika.

  • Sour cream

Liberally season your chicken on both sides. Drizzle olive oil in your non-stick skillet and add the chicken to cook on medium heat until fully cooked and slightly caramelized. Pull the meat aside to rest for about 10 minutes. After it has rested cut the meat into 1/2 inch cubes and toss with the collected juices in the pan.

Drain a can of whole black beans, add beans, seasonings and olive oil to a non-stick skillet. Warm the beans and let some of the moisture evaporate.

Warm the corn tortillas on the griddle with a drizzle of olive oil. Add sour cream, beans, chicken, guacamole and your favorite hot sauce and enjoy!
