Ham Tacos

We love Taco Tuesday at our house, so we are documenting our weekly taco recipes.

This recipe was our answer to all of the leftover ham the holidays seem to bring. If you don’t have any ham, you can pick up a ham steak and prepare it the same way.

  • 1lb smoked ham cut into inch-long, thin strips and seasoned with chili powder (no additional salt is needed here)
  • 1 tbsp olive oil
  • 1 can pinto beans, drained and seasoned with salt, pepper, garlic powder and smoked paprika.
  • Corn tortillas, olive oil for griddle
  • Toppings: Avocado, corn salsa (https://mangiavita.com/2023/12/05/corn-salsa/ ) and the hot sauce of your choice

Cut the ham into small strips and add to a non-stick skillet with the chili powder and olive oil. Fry up the ham until it has a little bit of caramelization.

Add the drained pinto beans to a non-stick pan with a drizzle of olive oil and the seasonings to warm through.

Brush the corn tortillas with olive oil and griddle the tortillas until slightly golden. Add beans, meat, toppings, your favorite hot sauce and enjoy!

Note: This was great with hot sauces that had a sweet flavor or a fruit component, like pineapple.
