While this is not a traditional Bolognese sauce, I find it a tasty and quick tomato-based meat sauce for a delicious weeknight dinner.
- 1lb cooked pasta
- 1 tbsp olive oil
- 1 package of Italian sausage (removed from casing)
- 1 small can of Hunts tomato sauce
- 1 small can of Hunts tomato paste
- 2-3 cloves of garlic
- 1 small onion diced
- 1/4 cup red wine
- 1 cup water
- Seasoning: salt, pepper, basil, optionally red pepper flakes
- Grated Parmesan cheese
Remove the sausage from casing and cook in the olive oil in a large non-stick skillet, breaking up with a spatula. Add chopped garlic and onion until softened. Once the meat is no longer pink and the garlic and onion are softened, transfer the mixture to a food processor and pulse until evenly chopped into smaller pieces. Add the mixture back to the skillet and add the tomato sauce, paste red wine, water and seasonings. Stir and simmer for 20 minutes until all of the flavors have melded and deepened.
In the meantime, cook the pasta to al dente.
Mix about half of the sauce mixture with the cooked pasta. Plate the pasta, with extra sauce on top. Top with grated Parmesan and enjoy!
