This is an ice cream base recipe that should work in any ice cream maker. Follow the instructions for operation on your specific model.
Base
- 1 cup whole milk
- 2 cups heavy cream
- Pinch salt
- 1/2 cup sugar
- 1 tbsp brown sugar
- 2 tbsp instant coffee (mixed with just enough hot water to dissolve)
- 1 tsp cocoa powder
Gently stir the base ingredients together, until the sugar is dissolved.
Once everything is well combined, cover the mixture and put in the refrigerator overnight to chill.
Add the chilled mixture to your ice cream maker, following your model’s instructions.
Mix-ins – Once your base is softly set you can swirl in the the mix-ins. Work quickly, so that the base doesn’t melt too much.
- 1/2 cup sliced toasted almonds
- 1/4 cup fudge sauce
Once it is finished churning and freezing, pack your ice cream into pint or quart containers. Freeze overnight to let it harden to the appropriate consistency.
