Sweet Potato Brownies

A slightly healthier version of brownies, should you so desire it.

  • 1 cup cooked, mashed sweet potato
  • 1/2 cup brown sugar
  • 1/4 cup melted, salted butter
  • 1/4 tsp salt
  • 1/4 cup cocoa powder
  • 1/4 cup flour
  • 1/2 tsp baking powder
  • 1/2 tsp vanilla
  • 1 egg
  • 1/4 cup chocolate chips

Mix all ingredients well and pour batter into a prepared 8×8 pan, lined with parchment paper. Bake at 350 for about 15-20 minutes or until set. Enjoy!
