Pulled Pork and Cole Slaw Tacos

  • 1lb cooked boneless pork spareribs
  • 1 tbsp olive oil
  • Seasoning: Salt, pepper, garlic powder, Sweet Baby Rays BBQ sauce
  • Corn tortillas, olive oil for griddle
  • Toppings: Cole slaw (recipe: https://mangiavita.com/articles/cole-slaw/ ), shredded cheddar cheese, French fried onions, Spicy BBQ sauce (mixture of Sweet Baby Rays, and Crystal Hot Sauce)

Add the thawed meat to non-stick skillet, with olive oil and seasoning. Warm the meat through and drizzle with BBQ sauce, caramelize the meat slightly.

Combine the ingredients for the cole slaw and mix well, adjust seasoning as needed.

Brush the corn tortillas with olive oil and griddle the tortillas until slightly golden. Add meat, slaw, cheese, fried onions and a drizzle of spicy BBQ sauce with your favorite hot sauce and enjoy.
