Homemade Pesto

It is quick and easy to make homemade pesto, if you have a food processor and a few simple ingredients:

  • 1 large bunch of fresh basil (about 2 cups of leaves)
  • 1/4 cup pine nuts (you can also sub walnuts or almonds)
  • 1/4 cup grated parmesan or pecorino cheese
  • 1/4 cup olive oil
  • 2 tbsp water
  • Salt and pepper to taste

Add all ingredients to a small food processor except for the olive oil. Pulse until well processed and blended. Then add the olive oil and pulse to combine. Taste and adjust seasoning as needed. You can add more olive oil or a little bit of water to thin it out if needed.

Toss with cooked pasta, top with extra cheese and enjoy!

*Freeze it: Pesto can be frozen and saved for future use as a garnish or you can make a double batch and freeze the extra in a baggie, ice cube tray or small plastic container.
