Sausages and Peppers

A very quick and easy Italian dinner is Sausage and Peppers:

  • 1 pkg of Italian sausage (hot or sweet)
  • 4-5 bell peppers (I prefer red, but any color or mixed is fine)
  • 1 sweet onion
  • 1-2 garlic cloves minced

Remove the sausage from the casing, or slice and fry up in a large frying pan. Cut up the bell peppers and onions into bite-sized pieces. Remove the cooked sausage and put in the vegetables (you can remove some of the grease from the pan, if there is a lot). Sauté the veggies on high until they start to soften, salt and pepper to taste (remember the sausage has a lot of seasoning already) add the minced garlic. Put the cooked sausage back in the pan and cook it all together to let the flavors meld (you can cook longer to develop some caramelization).

Serve with crusty bread or garlic bread.
