Soy Chorizo, Potato and Scrambled Egg Breakfast Taco

We love Taco Tuesday at our house, so we are documenting our weekly taco recipes.

  • 1 package of soy chorizo, sauteed until caramelized (Note: you can use traditional meat chorizo if preferred, you may want to drain away any excess fat before assembling the tacos.)
  • 1 lb Yukon gold potatoes finely diced and sauteed in olive oil until tender and caramelized, with seasoning salt and pepper
  • 3 scrambled eggs – Beat eggs with 3 tbsp milk, cook with 1 tbsp butter, salt and pepper in a non-stick skillet
  • Small flour tortillas, warmed on a griddle
  • Shredded cheddar cheese and your favorite hot sauce

(Note: we like to make homemade tortillas when we have the time )

Cook the soy chorizo, potatoes and eggs and add to the warmed flour tortillas. Top with cheese and hot sauce. Enjoy!
