Steak Fajitas Tacos

We love Taco Tuesday at our house, so we are documenting our weekly taco recipes.

  • 1lb skirt steak, seasoned with salt, pepper, garlic powder, chili powder, cumin, and olive oil.
  • 1 sliced sweet onion
  • 1 chopped red bell pepper
  • 2 smashed garlic cloves
  • Flour tortillas warmed on the griddle (Homemade Flour Tortillas recipe: https://mangiavita.com/2024/02/16/flour-tortillas/ )
  • Pinto beans, drained and seasoned with olive oil, salt, pepper, garlic powder, chili powder.

Prepare the bell pepper, onion and garlic cloves and place in a warmed cast iron skillet over medium heat. Drizzle with olive oil, season with salt and pepper. Sauté peppers and onions until softened and caramelized. Set aside.

Liberally season your skirt steak on both sides. Drizzle olive oil in your cast iron and add the steak to cook on medium high heat to your preferred doneness, I like medium well. Pull the meat aside to rest for about 10 minutes. After it has rested cut the meat into 1/4 inch cubes and toss with the collected juices from resting.

Drain a can of whole pinto beans, add beans, seasonings and olive oil to a non-stick skillet. Warm the beans and let some of the moisture evaporate.

Warm the tortillas on the griddle. Add beans, meat, onions and peppers and enjoy!
