Corn Salsa

This is simple salsa that you can pull together quickly to brighten up any taco or burrito.

  • 1 cup corn (if you can cut fresh right off the cob, that is great, if not I prefer the texture of frozen corn)
  • 1 tbsp finely chopped cilantro
  • 1 scallion thinly sliced
  • 1 tsp of very finely chopped jalapeno (more if you like it spicier)
  • 1 tsp lime juice
  • Salt and pepper

You can microwave the corn if you are starting with frozen, just to get it thawed. Then mix all of the ingredients and adjust the seasonings to your liking. If you have time to chill the salsa for an hour the flavors will meld better.

Note: You can also add drained and rinsed black beans to this recipe to make a heartier dip for enjoying with chips.
