Roasted Tomatillo Salsa

  • 1lb cleaned tomatillos
  • 3 scallions
  • 3 cloves of garlic (in the husk)
  • 1/2 of a jalapeno (more if you like it spicier)
  • Seasonings: olive oil, salt and pepper
  • 1 tsp lime juice
  • Cilantro

Add the tomatillos, scallions, garlic, and jalapeno to a roasting dish. Drizzle with olive oil and season with salt and pepper. Roast in the oven at 425 until wilted and caramelized about 25 minutes. The tomatillos often burst, so just make sure they aren’t burning.

Take out of the oven and let everything cool a bit. Remove the garlic cloves from their husk and when cooled down add all of the roasted ingredients to a food processor along with a handful of cilantro and about a tsp of lime juice. I also collect any juices or caramelization from the roasting pan and add that as well. Blend well and adjust the seasoning as needed.
