Santa Maria Style Tri Tip Tacos

We love Taco Tuesday at our house, so we are documenting our weekly taco recipes.

  • 1lb Tri Tip, seasoned with salt, pepper, garlic powder, paprika, and olive oil.
  • 1 diced scallion (for beans)
  • Pinto beans, drained and seasoned with olive oil, seasoning salt, pepper, garlic powder, smoked paprika
  • Salsa (Recipe: )
  • Spicy BBQ sauce: 3 tbsp ketchup, 1 tsp Worcestershire sauce, 1 tsp hot sauce, 1 tbsp brown sugar, 1/4 tsp garlic powder, 1/4 tsp smoked paprika
  • Corn tortillas brushed with olive oil and warmed on the griddle

Liberally season your Tri Tip on both sides. Drizzle olive oil over the meat and add to indirect medium heat on your grill. Cook to your preferred doneness, and caramelize on the hot side of the grill. Pull the meat aside to rest for about 10 minutes. After it has rested cut the meat into 1/4 inch cubes and toss with the collected juices from resting.

Dice scallions, add to non-stick skillet, drizzle with olive oil, season with salt and pepper. Sauté until softened and add drained whole pinto beans and seasonings. Warm thoroughly.

Prepare your salsa and spicy BBQ sauce.

Warm the tortillas on the griddle. Add beans, meat, sauce, salsa and enjoy!
